Cool off on the hottest summer days with this refreshing fruit salad. A new take on the classic watermelon, basil, and feta salad, this recipe adds melon, peaches and heirloom tomatoes into the mix for an easy summer side dish.

This is probably the most refreshing salad I’ve ever had. So good for those sweltering summer days. And it’s so colorful too. The colors in this are just divine! Yes, I’m a sucker for colorful dishes.

If you love watermelon, basil and feta salads, then you will love this new take on a classic summer dish.

Watermelon, basil and feta are paired with melon, peaches and tomatoes then tossed in lime juice to create a refreshing fruit salad for the hottest summer days.

Now, I know, you’re probably thinking…tomatoes? Why tomatoes? You had me until tomatoes. But trust me, it’s so worth it. Especially if you can find some really good ripe summer tomatoes. Oooh…or even some great heirloom tomatoes.

This recipe is inspired by a similar salad I tried awhile back, and I’ve adapted it just a bit from the original. It’s like your favorite watermelon, basil and feta salad made even better!

This salad is best when enjoyed right away, or within a day – if it sits too long it tends to get a bit soggy.

This is perfect if you’re looking for a new way to use up some basil. Basil is a great match for so many types of foods which makes this salad a great side for many summer meals.

We paired this as a side with mushroom pizza (the Holy Shiitake pizza from Mellow Mushroom- yum!), and it also goes well with grilled chicken. Or even just on its own. Seriously delicious – I think I wanted to eat the whole bowl in one sitting.

Description

A new take on the classic watermelon, basil, and feta salad, this recipe adds melon, peaches and heirloom tomatoes into the mix for an easy summer side dish. Cool off on the hottest summer days with this refreshing fruit salad. 


Ingredients

Scale
  • 2 cups watermelon, cubed
  • 1 cup peaches, peeled, and cubed
  • 1/2 cup cantaloupe melon, cubed
  • 1/2 cup tomatoes, seeds removed, and cubed
  • 1 tablespoon fresh basil, sliced into ribbons
  • 1 tablespoon lime juice
  • 1/4 to 1/2 cup crumbled feta cheese

Instructions

  1. In a large bowl, combine watermelon, peaches, cantaloupe, tomatoes, and basil.
  2. Pour lime juice over fruits, and stir to combine.
  3. Add feta, and stir gently.
  4. Serve.

Notes

Enjoy within 1-2 days

Can use 1/4 cup or up to 1/2 cup feta cheese

Can use different varieties of heirloom tomatoes to taste.

You can swap nectarines for peaches if desired.
