Fluffy, soft muffins full of whole grain oats and warm cinnamon. This simple and easy muffin recipe freezes well and reheats fast for a quick and healthy breakfast.

With muffins, there are certain recipes that I reach for time and again. No fail, delicious, easy. These cinnamon oatmeal muffins are at the top of my list. Tried and true, these are the muffins that I can’t get enough of.

The key to fluffy muffins is buttermilk! I love adding buttermilk in muffins made with whole grains because they come out light and delicious. And these cinnamon oatmeal muffins are packed with whole grains – both from white whole wheat flour and oats.

I’ve talked about the benefits of fiber before, and one of the best ways to add fiber is by eating whole grains like oats.

Why are Oats Healthy?

Oats are a whole grain high in both soluble and insoluble fiber and minerals. The soluble fiber found in oats is what wraps up cholesterol in your body and can help to lower your blood cholesterol levels.

How to Make Oatmeal Muffins

  • Start by soaking your oats in buttermilk by placing them in a large bowl and pouring the buttermilk over the oats and stirring to combine.
  • While the oats settle in to the buttermilk, start prepping and measuring the remaining ingredients.
  • Spray muffin pans and set them aside.
  • Measure brown sugar, beaten eggs, oil, applesauce, and vanilla. You can pour this into the oat and buttermilk mixture.
  • Then measure out your dry ingredients – flour, baking powder and baking soda, salt and cinnamon – in a separate bowl.
  • Add the flour mixture to the oat mixture gradually, stirring until just combined.
  • Divide into muffin cups and bake until done in the center.

These muffins smell divine when baking, and are light and delicious when done.

How do I serve cinnamon oatmeal muffins? So many ways! They are great paired with plain greek yogurt and fruit. They are also delicious with a spread of peanut butter or almond butter.

And…you can freeze them!

How to Freeze Muffins

  • Place cooled muffins in a single layer in a freezer safe bag.
  • Set muffins in the freezer until frozen.
  • To reheat, remove one or more muffins from the bag. Microwave for 30-45 seconds for 1-2 muffins. You may need to heat longer when warming more than 4 muffins at a time.

Description

Fluffy, soft muffins full of whole grain oats and warm cinnamon. This simple and easy muffin recipe freezes well and reheats fast for a quick and healthy breakfast.


Ingredients

Scale

2 cup quick-cooking oats

2 cup buttermilk

2 eggs

1 cup packed brown sugar

1/4 cup vegetable oil

1/4 cup unsweetened applesauce

1 Tablespoon vanilla extract 

2 cups white whole wheat flour

2 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon


Instructions

  1. Preheat oven to 400F. 
  2. Combine oats and buttermilk in a large bowl, stirring to combine. Let sit while you measure out the remaining ingredients and prepare baking pans, about 10-15 minutes. 
  3. Spray muffin pans with nonstick baking spray, or line 18 muffin cups and set aside. 
  4. Combine brown sugar, eggs, vegetable oil, applesauce, and vanilla extract, stirring to mix into the oat mixture. 
  5. In a separate bowl, mix white whole wheat flour, baking powder, baking soda, cinnamon, and salt. 
  6. Add flour mixture to the oat mixture, gently stirring until just combined. 
  7. Distribute evenly between 18 prepared muffin cups.
  8. Bake at 400 F for 16-18 minutes, until a toothpick inserted into the center of muffins comes out clean. 
  9. Cool slightly in muffin tins before removing to cooking racks. 
  10. Serve.

Notes

To freeze: place muffins in a single layer in a freezer safe bag.

To warm frozen muffins: place muffins on a microwave safe plate and heat for 30-45 seconds for 1-3 muffins. Increase time for 4 or more muffins.
