Salads can be a real time saver at dinner, and this blueberry and mandarin orange salad with goat cheese is our go-to salad for a quick weeknight meal. It’s so easy to throw everything into a bowl while whatever protein we’re adding is cooking on the grill or broiling in the oven (I’m talking about you, delicious broiled salmon).

Sometimes when we’re meal planning, we get stuck for ideas. I know. Sounds impossible, right? Nah…we get just as lazy with meal planning as everyone else does at times, and amidst the “I don’t knows” and “can’t we just figure it out laters?” someone will say, “what about salads?” and the other will raise a hand in triumph and say, “yes! of course!” and thus ends our meal planning rut.

This blueberry and mandarin orange salad with goat cheese is probably the one we make most often. We’ll sometimes swap out different fruits that are in season, but we usually have mandarins on hand, and blueberries as well. These fruits pair so well with goat cheese, and the red onion gives it just the kick it needs.

My favorite dressing with the blueberry and mandarin oranges is a balsamic vinaigrette. And with that I add grilled protein – usually salmon, or chicken. Shrimp is another great choice here too. If you’re not into or not able to grill salmon (winter I’m looking at you), simply broil it – place the salmon on foil, season and broil. I promise it’s as good as grilled.

Description

Easy healthy recipe for blueberry and mandarin orange salad with goat cheese. Perfect for a quick weeknight meal — just add your favorite protein.


Ingredients

Scale

6–10 ounces baby spinach

1 cup blueberries

1/2 cup mandarin oranges

2 Tbsp thinly sliced red onion

4 ounces goat cheese


Instructions

  1. Divide spinach into four large bowls.
  2. Top with blueberries, mandarin oranges, red onion, and goat cheese.
  3. Optional: add your favorite protein such as grilled chicken, grilled salmon, grilled shrimp, edamame.
  4. Serve with your favorite dressing.

Notes

Add your favorite protein to make this a filling meal – edamame, tofu, chicken, salmon, shrimp all work well here.

Balsamic vinaigrette is my favorite dressing with this, but use your favorite here.
