Easy healthy recipe for blueberry and mandarin orange salad with goat cheese. Perfect for a quick weeknight meal — just add your favorite protein.
6–10 ounces baby spinach
1 cup blueberries
1/2 cup mandarin oranges
2 Tbsp thinly sliced red onion
4 ounces goat cheese
- Divide spinach into four large bowls.
- Top with blueberries, mandarin oranges, red onion, and goat cheese.
- Optional: add your favorite protein such as grilled chicken, grilled salmon, grilled shrimp, edamame.
- Serve with your favorite dressing.
Add your favorite protein to make this a filling meal – edamame, tofu, chicken, salmon, shrimp all work well here.
Balsamic vinaigrette is my favorite dressing with this, but use your favorite here.
