Nothing screams summer more than fresh, ice cold watermelon. I have the perfect summer recipe that pairs fresh watermelon with a surprising partner to bring you a delicious, protein packed dessert that really can be a snack too! Because what is better than an indulgent treat that is really healthy and turns out to be a guilt-free refreshment? There’s nothing better in my book!

These watermelon yogurt pops are simple to make with only three ingredients, and they are perfect for a summer treat.

To be honest, I had set out to make a healthier version of my beloved cookout watermelon milkshake. And I’ll still get there, but I happened to make this yummy detour when recipe testing and decided that this test would make a better popsicle than milkshake. So here we are.

This recipe for watermelon yogurt pops is super simple to make – so simple that you’ll wonder why you don’t make popsicles all the time. Or maybe that’s just me.

All you’ll need to do is blend up three things to make these watermelon yogurt pops — watermelon, yogurt, and a little honey to sweeten them.

I used plain whole milk greek yogurt, because that’s what we tend to have on hand, and I think it makes a great addition to popsicles. Creamy and with a bonus of extra protein because the greek yogurt has been strained making it thicker and packed with more protein than regular yogurt.

With all that protein I think it makes a great snack, so if you’re in the mood for an afternoon treat, indulge in one of these watermelon yogurt pops, because they’re the perfect summer pick me up, and make for a satisfying snack.

Finn loves these too, which is great news for when I need to give him an easy snack after school or playing outside in the summer — he has such an appetite, and this is the perfect refreshing snack to help cool him down and fill him up at snack time. He just loves watermelon right now!

Speaking of watermelon, besides being delicious, it’s packed with nutrients like vitamin C and lycopene which is great to keep you healthy.

Watermelon Yogurt Pops

Description

These watermelon yogurt pops are a simple and refreshing summer treat made with only three ingredients. Great for a snack or dessert!


Scale

Ingredients

2 cups watermelon, cubed

1 1/2 cups plain greek yogurt

1 Tbsp honey


Instructions

  1. Add watermelon, yogurt and honey to a blender.
  2. Blend until smooth.
  3. Pour into popsicle molds, and place in freezer, being sure to keep the popsicle molds level.
  4. Freeze for at least 4 hours, until set.
  5. To remove from molds, run the popsicles under warm water for about 30 seconds until they start to loosen from the molds.

Notes

Placing the popsicle molds on a baking sheet or small tray helps to keep them level in the refrigerator.

After freezing, run the molds under warm water to help them release. Or, fill a container with warm water as deep as the popsicle molds (without flooding them with water!) and submerge the molds in the water for about 20-30 seconds.

Store in the freezer for up to a week.
