A simple summer spinach salad topped with cherries, blueberries and goat cheese. This festive red, white, and blue salad is perfect for a summer get together or even a quick weeknight meal.

I’m sharing a festive summer spinach salad today that is super simple to prepare. This easy salad is loaded with some of my summer favorites — cherries and blueberries!

And of course, don’t forget the goat cheese!

Quick and easy salads are favorites in our house because we usually have everything already on hand, and they are simple to make!

I love this spinach salad dressed with a balsamic vinaigrette (Annie’s is a favorite store-bought dressing for us), but I think most oil and vinegar based dressings would be just as delicious.

Ingredients Needed

Spinach

Blueberries

Cherries

Goat cheese

Red onion

Dressing of your choice

Equipment Needed

Knife or cherry pitter

The trickiest part of making this spinach salad is pitting the cherries. I use a handy cherry pitter that I found on Amazon, but if you don’t have one, just use a small paring knife instead.

When you pit the cherries, just know that the juice can get very messy, so you will want to have some towels or paper towels on hand (and be sure you use something you don’t mind getting stained with cherry juice).

How to Pit Cherries

  • Wash cherries and pat them dry
  • Remove any stems from the cherries
  • If using a cherry pitter, place the cherries inside, then push the pit through into a small bowl; Remove the cherry then set aside and repeat with the other cherries
  • If you’re using a paring knife, carefully slice around the cherry from one end all the way around to the other; then gently twist the two halves to separate them; then carefully dig out the pit from the remaining half with a small spoon or the tip of your knife (be careful!)

Once you have pitted your cherries, the rest is simple to put together! Simply add the spinach to your bowls, then top with the cherries, blueberries, goat cheese and red onion.

Description

A simple summer spinach salad topped with cherries, blueberries and goat cheese. This festive red, white, and blue salad is perfect for a summer get together or even a quick weeknight meal.


Ingredients

Scale

4 cups spinach leaves

10–12 cherries, pitted

1/4 cup blueberries

4 ounces goat cheese

1/2 tbsp red onion (or more to taste)


Instructions

  1. Divide spinach into two bowls
  2. Rinse cherries and blueberries, pat dry
  3. Remove pits from cherries
  4. Add cherries and blueberries to salad bowls
  5. Divide goat cheese between the bowls
  6. Sprinkle diced red onion over the salads to taste
  7. Serve with your favorite vinaigrette dressing

This salad would be great with added protein such as grilled chicken or salmon
