Description

A simple summer spinach salad topped with cherries, blueberries and goat cheese. This festive red, white, and blue salad is perfect for a summer get together or even a quick weeknight meal.


Ingredients

Scale

4 cups spinach leaves

1012 cherries, pitted

1/4 cup blueberries

4 ounces goat cheese

1/2 tbsp red onion (or more to taste)


Instructions

  1. Divide spinach into two bowls
  2. Rinse cherries and blueberries, pat dry
  3. Remove pits from cherries
  4. Add cherries and blueberries to salad bowls
  5. Divide goat cheese between the bowls
  6. Sprinkle diced red onion over the salads to taste
  7. Serve with your favorite vinaigrette dressing

Notes

This salad would be great with added protein such as grilled chicken or salmon
