Description
A simple summer spinach salad topped with cherries, blueberries and goat cheese. This festive red, white, and blue salad is perfect for a summer get together or even a quick weeknight meal.
Ingredients
Scale
4 cups spinach leaves
10–12 cherries, pitted
1/4 cup blueberries
4 ounces goat cheese
1/2 tbsp red onion (or more to taste)
Instructions
- Divide spinach into two bowls
- Rinse cherries and blueberries, pat dry
- Remove pits from cherries
- Add cherries and blueberries to salad bowls
- Divide goat cheese between the bowls
- Sprinkle diced red onion over the salads to taste
- Serve with your favorite vinaigrette dressing
