Here are three super easy summer breakfast ideas for those days when you need a quick bite to eat, or just don’t want to turn on the stove. Because if you’re like me summer makes you a bit lazy and you just don’t want to have to think about cooking breakfast everyday.
Plus, it’s hot, and sometimes you don’t want a hot breakfast.
Enter one of my favorite quick breakfast plans – yogurt breakfast bowls!
And they’re really simple to put together. Start with yogurt as your base, then you can layer in toppings to round out the bowl. Easy, and delicious, and of course nutritious!
As a general rule I use plain, unflavored yogurt so that I can use fruit to add sweetness. Lately I’ve been buying whole milk Greek yogurt, but I also love whole milk regular yogurt as well. The Greek yogurt has been strained so it has more protein in a serving than regular yogurt, and that helps me feel full after enjoying one of these bowls. Also, it’s so creamy and really satisfying for breakfast – it feels indulgent, but it’s so full of protein and calcium and is perfectly healthy and delicious!
When choosing toppings, I usually go with what I have on hand so that it’s a quick and easy summer breakfast. The great thing about summer is that there is a TON of fresh produce available, and we usually have about three or four different types of fruit in the house.
While open to interpretation based on your hunger level, I usually stick to a few “rules” when making yogurt breakfast bowls.
1) Start with 1/2 to 1 cup of yogurt
2) Add about 1/2 cup fruit
3) Add about 1-2 Tbsp of nuts or seeds
One of the bowl here is nut and seed free, but you could add them in if you would like to – it’s really up to you! Summer is laid back and casual, so don’t stress too much about your breakfast!

Description

Ingredients
1/2 to 1 cup plain yogurt (regular plain, or Greek plain yogurt)
1 Lemon Bar flavor Larabar
1/2 cup blueberries
1 Tbsp chia Seeds
Instructions
- Add 1/2 to 1 cup of yogurt to a bowl
- Top with 1/2 cup blueberries.
- Break up or cut the Larabar into small pieces, and add to the bowl.
- Add about 1 Tbsp of chia seeds.
- Enjoy!
