A deliciously creamy salmon dish made with flavorful garlic, fresh spinach and tomatoes. Made in just one pan, this simple dish pairs well with hearty whole grains such as farro, barley, or a rustic whole wheat bread.

If you’re looking for a simple and delicious, soak up every last bit of sauce because you can’t stop eating it type of dish, then this creamy garlic and spinach salmon recipe is for you.

This salmon recipe is full of veggies — spinach! tomatoes! — and packed with flavor all wrapped up in a creamy sauce that you will not want to stop eating.

And if I can manage to make a recipe in just one pan, I will, because the fewer dishes the better! So that is what I’m bringing to you today – one pan creamy garlic and spinach salmon with tomatoes.

How to Make Creamy Garlic and Spinach Salmon with Tomatoes

  • Start by searing your salmon in the pan for a few minutes on each side.
  • Next, remove the salmon to a plate (you’ll be adding it back in later), and add in halved cherry or grape tomatoes. Cook these down a little. I like to mash them a bit with the back of my spoon to help them cook down.
  • Then, add your spinach to wilt.
  • Next a splash of cream and cheese.
  • Add the salmon back in and simmer until the salmon is cooked through

This salmon dish is amazing paired with a hearty whole grain that can hold up to the creamy sauce — think farro, or barley. If you don’t have either of those you can’t go wrong with a rustic whole grain bread. Trust me on this one – you will want to swoop up all of the sauce onto your bread because it is so tasty!

Description

A deliciously creamy salmon dish made with flavorful garlic, fresh spinach and tomatoes. Made in just one pan, this simple dish pairs well with hearty whole grains such as farro, barley, or a rustic whole wheat bread.


Ingredients

Scale

4 4-oz salmon filets

Olive oil

Salt

Pepper

1 pint grape tomatoes, halved

3 cloves garlic, minced or crushed

5 oz fresh spinach leaves, rinsed and chopped

1/2 cup cream

1/4 cup shredded parmesan cheese

1 tsp Italian seasoning


Instructions

  1. Rinse salmon and pat dry.
  2. In a large skillet, heat olive oil over medium high heat.
  3. Season salmon with salt and pepper on both sides.
  4. Add salmon to the heated skillet, cooking for about 3 minutes per side.
  5. Remove salmon from the skillet and transfer to a plate to set aside. 
  6. Add tomatoes to the skillet and cook for 5-7 minutes, occasionally pressing down gently on tomatoes as they cook. 
  7. Add garlic to the skillet and cook for 1-2 minutes. 
  8. Add chopped spinach to the skillet and cook until just wilted. Turn heat down to medium low.
  9. Add cream and parmesan cheese, stirring gently to melt the cheese into the cream, then add italian seasoning, stirring to combine. 
  10. Add salmon back to the skillet and simmer for at least 5 minutes or until the internal temperature of the fish reaches 145F.

    This dish is fantastic. It’s now my favorite way to fix salmon. There isn’t a thing I would change. I served it with rice which I think pairs the best to enjoy all the flavors it has.
