Mediterranean Layer Dip | NeverAnyThyme.com

This Mediterranean layer dip is a healthy snack perfect for a Super Bowl party. Because we all need to balance out the wings, pizza, and chips, right?

I started making this dip a few years back when looking for some healthier options to the typical “sit and watch football” foods. It’s easy to put together, and super delicious!

All you need is a package of hummus, a small container of low fat or non-fat Greek yogurt, feta, and some veggies to add on top.

I call it my seven-layer – with an optional eighth layer – dip. I’m not much of an olive person, but if you are, feel free to add that extra eighth layer.

If making this for a crowd, you’ll start out with a shallow container (square, rectangular, or round – it doesn’t matter) and spread a layer of hummus in the bottom. Next comes the Greek yogurt, followed by the feta. From there, sprinkle on the veggies in layers – green onion, cucumber, tomato, chopped spinach, and finally olives if you’re into that kind of thing.

You can serve with pita or other chip – I like to make homemade pita chips by tearing up a whole wheat pita into pieces and lightly toasting until crispy in the oven.

This can keep in the fridge a few days, but it does tend to get a little watery the longer it sits, so for maximum deliciousness and minimum ick-factor, serve within a day.

Ingredients

Scale
  • 1 package hummus (about 10 ounces)
  • 1 cup Greek yogurt (low fat or non-fat)
  • 1/2 cup feta cheese
  • 2–3 green onions, sliced
  • 1 cucumber, diced
  • 2–3 roma tomatoes, seeds removed and diced
  • 1 cup spinach, chopped
  • sliced black olives

Instructions

  1. In a shallow dish, layer each ingredient beginning with hummus, and ending with olives.
  2. Serve with pita, or pita chips.

Notes

Can keep in the refrigerator up to 1-2 days.
