Kale, Blueberry & Avocado salad

Easy kale salad recipe with blueberries, avocado, and sliced almonds tossed with a honey lime vinaigrette dressing.



For the salad:

2 cups kale, stems removed, washed and torn into small pieces 

1/2 cup blueberries 

1/4 avocado, diced

1 Tbsp sliced almonds

For the honey lime vinaigrette dressing:

1/4 cup lime juice

2 Tbsp honey

1 tsp Dijon mustard

1/2 tsp garlic powder

1/2 tsp kosher salt

1/4 tsp ground black pepper

1/4 tsp ground cumin

1/4 cup olive oil

1/4 cup vegetable oil (such as avocado or canola)


  1. Wash kale, and pat dry.
  2. Remove kale stems, and tear or slice kale into smaller pieces. Place kale into a large bowl.
  3. Drizzle a small amount of olive oil and sprinkle lightly with salt.
  4. Using your hands, massage oil and salt into the kale leaves until kale feels less tough (about a minute).
  5. Top kale with blueberries, avocado, and almonds.

To prepare dressing:

Place all ingredients into a bowl and whisk until combined, or place into a clean jar with a lid, then shake until well combined.
