For a quick and easy kale salad, this recipe can’t be beat. The refreshing and bright honey lime vinaigrette dressing pairs wonderfully with fresh kale, blueberries, and creamy avocado.
When I make a kale salad I like to massage the kale first to make the kale more tender and easier to eat. This is really helpful with larger, tougher kale leaves.
I paired this kale, blueberry, and avocado salad with a honey lime vinaigrette recipe that I found on allrecipes. It is a little sweet with wonderful bright flavors from the lime that pair nicely with blueberries and avocado.
How to make kale, blueberry and avocado salad
- Wash kale in cool water then pat dry.
- Gently remove stems and tear into smaller pieces then place in a large bowl.
- Drizzle a small amount of olive oil and a pinch of salt over the kale.
- Gently massage the olive oil and salt into the kale leaves until they begin to soften.
- Add blueberries, avocado, and almonds to the bowl.
- Drizzle honey lime vinaigrette over the salad.
- Serve.

Ingredients
For the salad:
2 cups kale, stems removed, washed and torn into small pieces
1/2 cup blueberries
1/4 avocado, diced
1 Tbsp sliced almonds
For the honey lime vinaigrette dressing:
1/4 cup lime juice
2 Tbsp honey
1 tsp Dijon mustard
1/2 tsp garlic powder
1/2 tsp kosher salt
1/4 tsp ground black pepper
1/4 tsp ground cumin
1/4 cup olive oil
1/4 cup vegetable oil (such as avocado or canola)
Instructions
- Wash kale, and pat dry.
- Remove kale stems, and tear or slice kale into smaller pieces. Place kale into a large bowl.
- Drizzle a small amount of olive oil and sprinkle lightly with salt.
- Using your hands, massage oil and salt into the kale leaves until kale feels less tough (about a minute).
- Top kale with blueberries, avocado, and almonds.
To prepare dressing:
Place all ingredients into a bowl and whisk until combined, or place into a clean jar with a lid, then shake until well combined.
