Cucumber Tomato Salad with Dill

Description

With all of your summer favorites  in one bowl this tomato and cucumber salad is refreshing and light which makes it perfect for warm days. This recipe for cucumber and tomato salad with dill  is simple to make and is the best summer salad for entertaining.


Ingredients

Scale

1 pint grape tomatoes, sliced in half

1/2 cup sweet onion, chopped

1 cup cucumber, seeds removed and diced

4 Tbsp rice vinegar

1/4 tsp salt

1 1/2 to 2 Tbsp fresh dill, chopped (or 1 tsp dried dill)


Instructions

  1. In a large bowl, combine tomatoes, onion, and cucumber.
  2. Add rice vinegar, salt and dill.
  3. Stir to combine.
  4. Refrigerate 2-3 hours before serving.

Notes

This salad is best when the flavors have time to sit together and get to know one another. At least a few hours, if not overnight.

The salad keeps in the fridge for a few days (if it lasts that long!).
