This tomato and cucumber salad is refreshing and light which makes it perfect for warm summer days. Better yet, it uses no oil, only vegetables marinated with fresh herbs and rice vinegar. This is one salad I just can’t get enough of each summer, and it’s so simple to make!

Dave and I recently stopped by the farmer’s market, and summer is truly my favorite time to go. I tend to get into a little trouble deciding what to buy because, truthfully, I want everything!

We settled on some fresh heirloom grape tomatoes, and from there I knew I wanted to make my favorite easy summer salad. We ended up finding everything for the salad at the farmer’s market too! Fresh tomatoes, cucumber, onion, and dill.

Even if you don’t have a farmer’s market near you, you’ll still be able to find everything you need easily at the grocery store.

This cucumber and tomato salad is simple to make and is the best summer salad for entertaining. If you have friends or family coming over, just put this together a few hours to a day ahead of time because the longer everything sits together, the better it tastes. It’s the best salad to take to a bbq because you can mix it up the night before and you’ll be ready to go!

I love make ahead salads like this one because it takes the pressure off of getting ready and worrying about what food I’ll have ready to go for guests or to bring with me to a potluck.

It’s super easy to make, too!

How To Make Cucumber Tomato Salad with Dill

  1. Slice cucumbers, tomatoes, and onion and place in a large mixing bowl.
  2. Chop dill, and add to bowl.
  3. Sprinkle salt and rice vinegar over the vegetable and dill. Stir to mix.
  4. Store in the fridge for at least 3 hours before serving

As you can see, it’s very simple to make, and the flavors are just amazing! I love that it doesn’t add oil, because it’s just one less ingredient to worry about and it packs in a ton of flavor even without the oil.

The flavors of this cucumber and tomato salad with dill bring together all of the best things about summer into one bowl. Simple and easy is what summer is all about and this is one simple and easy salad you don’t want to miss!

Description

With all of your summer favorites  in one bowl this tomato and cucumber salad is refreshing and light which makes it perfect for warm days. This recipe for cucumber and tomato salad with dill  is simple to make and is the best summer salad for entertaining.


Ingredients

Scale

1 pint grape tomatoes, sliced in half

1/2 cup sweet onion, chopped

1 cup cucumber, seeds removed and diced

4 Tbsp rice vinegar

1/4 tsp salt

1 1/2 to 2 Tbsp fresh dill, chopped (or 1 tsp dried dill)


Instructions

  1. In a large bowl, combine tomatoes, onion, and cucumber.
  2. Add rice vinegar, salt and dill.
  3. Stir to combine.
  4. Refrigerate 2-3 hours before serving.

Notes

This salad is best when the flavors have time to sit together and get to know one another. At least a few hours, if not overnight.

The salad keeps in the fridge for a few days (if it lasts that long!).
