Frozen Chocolate Peanut Butter Banana Bites

Description

Just a few simple ingredients are all you need for this tasty and healthy dessert — frozen banana slices topped with peanut butter and coated in dark chocolate. This is an easy and delicious no bake dessert recipe.


Ingredients

1 banana, sliced into about 18 slices

3/4 cup dark chocolate chips

1/2 Tbsp coconut oil

1 1/2 Tbsp peanut butter

1 Tbsp crushed or chopped peanuts


Instructions

  1. Place a nonstick silicone baking mat or parchment paper onto a baking sheet.
  2. Slice banana into about 18 slices and place flat on the lined baking sheet.
  3. Place baking sheet in freezer for about 1 hour until banana slices are frozen through.
  4. In a microwave-safe bowl, combine chocolate chips and coconut oil. Heat in microwave for 30 seconds, then remove and stir.
  5. If chocolate is not melted, continue heating in microwave for 15 seconds, stirring again. Repeat in 15 second increments, stirring in between, until chocolate is melted.
  6. Remove banana slices from freezer.
  7. Spread a thin layer of peanut butter over each banana slice.
  8. Place one peanut butter topped banana slice flat on a fork, and set this into the bowl of melted chocolate. Use a spoon to coat the banana slice with chocolate. Remove coated banana and place back onto the lined baking sheet.
  9. Sprinkle coated banana slice with chopped peanuts (if using).
  10. repeat with remaining banana slices until all are coated.
  11. Place baking sheet back into freezer for at least 30 minutes to set chocolate.
  12. Store in an airtight continer in the freezer.

Notes

Freeze bananas for about an hour before coating with peanut butter and chocolate.

If your melted chocolate starts to thicken, place bowl back in microwave and heat for 15 seconds to remelt chocolate.

If topping with peanuts, I suggest doing this right after you coat each slice with chocolate – if not the chocolate may harden too quickly for the peanuts to stick.
