Pew pew pew! Dave calls these dark chocolate pomegranate bites a taste explosion, and he’s pretty much obsessed with them. I agree though, they are really amazing, and just the kind of treat you want to reach for when you need a little something. They are habit forming, and you’ve been warned.
This treat couldn’t be simpler – dark chocolate and pomegranate arils – two ingredients and that’s it. You could enjoy these within mere minutes, so what are you waiting for?
These dark chocolate pomegranate bites are the perfect winter treat, and are a healthier option than a lot of the holiday desserts out there. In fact, pomegranates and dark chocolate are packed with antioxidants, which means these give you a great immune boost. A heart healthy, cold fighting dessert? Sign me up!
All you need to make these are dark chocolate chips (the higher the cacao percentage, the more antioxidants you get), and pomegranate arils. Pomegranate arils are the red part surrounding the seeds, and give you that nice pop of juice when you bite them.
You can either buy a pomegranate and break it open to separate out the arils, or you can buy them already separated and rinsed. I opted for a whole pomegranate, which I sliced open, then used my fingers to gently scoop out the arils into a bowl of water. The bowl of water is useful because the arils sink to the bottom and the pith floats to the top so you can easily scoop it away.
Once you have your pomegranate sorted, rinsed, and dried, all you need from there is to melt chocolate and after that, everything comes together in a snap. Spoon the melted chocolate in small dollops onto a silicone baking mat. I imagine a wax paper or parchment lined baking sheet would work here also.
Once you have little rounds of melted chocolate on your sheet, sprinkle the pomegranate arils on top making sure to nestle them in the chocolate so that they stick when cooled. Place them in the fridge to cool, at least 15 minutes.Print
A healthier sweet treat full of antioxidants from dark chocolate and pomegranate.
1/2 cup dark chocolate chips (or dark chocolate pieces)
1/2 cup pomegranate arils
1. In a small saucepan, melt chocolate over medium-low heat.
2. Spoon melted chocolate into small dollops onto silicone baking mat or lined baking sheet.
3. Sprinkle pomegranate arils on top of chocolate.
4. Place in refrigerator to cool, at least 15 minutes.
5. Serve and enjoy!
I used Ghiradelli 60% cacao chips, but any dark chocolate will work here – remember the darker the more antioxidants (and health benefits!) you get.
Your mileage will vary depending on how big or small you dollop out the chocolate. I get about 10-18 bites depending on the size of my dollops.
Store these in the fridge to keep them fresh (and unmelted!)
