chicken soup in bowl on light backgroundIt’s officially October, and to kick off the fall season I’m rounding up my best fall recipes. These are my favorite cozy recipes that I make year after year. Because, it’s fall! And you need something warm to eat that’s easy to make, healthy and filling.

Colorful leaves, cozy sweaters, squirrels making a nest in your gutter…oh wait. That’s just us.

Squirrels aside, it’s finally starting to feel like fall around here. It took awhile, but (finally!) the weather here in Raleigh today is overcast and cool with a misty kind of rain coming down. The perfect weather for these fall favorites that I’m excited to share with you today.

These recipes are all simple, filling, and will warm you to your toes — perfect for a fall potluck, easy dinner, or just when you want a big bowl of comfort food.

I love this reicpe because of the depth of flavors in the broth, and it is hearty and filling when you need a big bowl of soup to heal your head and heart. So simple. So delicious. They take awhile to simmer (working on an Instant Pot version soon, I promise!), but are soooo worth it. Add a little butter for flavor, or leave it out to make it vegan. This one is great with cornbread or crusty bread. Get the recipe HERE.
